Breakfast

  • 6 oz yellow creek petite filet - two scrambled eggs - lightly sauteed spinach
  • Omelette - Seared wild salmon - Leon goat cheese - parsley - thin sliced red onion
  • Thai sunrise - 3 eggs scrambled - micro basil - chili - sauteed crabmeat
  • Fresh fruit bowl - yogurt - Cretan honey drizzle
  • Challah french toast - melted butted - pure maple syrup
  • Captains platter for 4 - Belly lox - white fish - toasted bagels -8 scrambled eggs- capers - sliced onions- butter - cream cheese- and a side of fruit
  • Note - Yacht guests can suggest their favorite items and I can build omelettes around that

Lunch/Dinner

  • Seared Jumbo Lump Crab Cake - meyer lemon - white truffle drizzle - side salad or brioche bun
  • Greek Salad Neuvo- Poached tomatoes, cucumber, feta, fresh lemon, dill with choice of sliced steak, chicken or seared wild salmon
  • Avocado Toast - sprouts - toasted multigrain bread
  • Lobster Mac and Cheese
  • Roast Beef - Au Jus - toasted garlic bread
  • Calabrian Spaghetti -roasted garlic -parsley - wild shrimp - lemon -chili
  • 10 oZ Grass Fed Ribeye - seared to perfection side salad or garlic mashed potatoes
  • Pan seared Octopus Entree - olive oil, meyer lemon, capers, pickled red onion
  • Halibut (or local fish of the day) - gently seared - or butter poached - island capers - side of broccolini

Appetizers

  • Gambas al ajillo - Shrimp, poached garlic, Evoo, touch of saffron, salt
  • Seasonal Oyster - House mignonette (Reduced barrel aged red wine
    vinegar, pink peppercorn, salt, muddled herbs)
  • Pan seared scallop -2 scallops - Brown butter - dash of salt
  • Grilled cheese choice of American or gruyere - Tomato Bisque
  • Bifteki sliders - Grass fed beef, dill, red onion, served with tzatziki on a
    brioche bun
  • Pan seared Octopus - olive oil, meyer lemon, capers, pickled red onion

Dessert

  • The Classic - Warm walnut brownie served with a scoop of Vanilla Haagendaz ice cream
